Don't Have A Cow, Man!!! Delivery 7/23

Straight up cheese delivery, no chaser! We're going purist on this one: three different 1/4 lbs of cheese, and no cow's milk for all of us out there who have difficulties with lactose (Also why do cows have hooves? Because they lack toes). 

The first cheese is Brabander, a personal favorite. This is an aged goat's milk gouda from the Netherlands, hand selected by the Essex St. Cheese Company. It is firm, yet rich and creamy, very light on the goaty tang, and I think it tastes like white chocolate. 

The next TWO cheeses are Basque sheep's milk cheeses! The first is Ossau-Iraty. This cheese has an A.O.C. designation. It is supple, grassy, and butterscotch-y. The third cheese is Petite Basque. This is a firm sheep's milk cheese, texturally similar to a Manchego but with a huge nutty profile.
