Bread and Cheese Delivery 8/12

Ravelin is baking us a few extra loaves of their white chocolate-lemon bread this Wednesday! We'll be sending out a 1/2 loaf of said bread, paired with two cheeses. We went with a softer cow/sheep's milk cheese and an aged sheep's milk tomme (no goat) this time. Both of these cheeses are from Green Dirt, whom you may remember from our tasting a few weeks ago. And the cheeses are......(drumroll)....

Wooly-Rind: This is a mixed-milk (cow and sheep) cheese modeled after Camembert. This cheese is softer (especially as it warms up) and tastes delicately grassy and mushroomy. 

Prairie Tomme: This is an aged sheep's milk Tomme modeled after the Croatian cheese called Paski Sir. This cheese is firm, deeply nutty, gamey, and cave-y. I don't know why, but it reminds me of French Alpine cheeses.

The jams for this week are some new creations: Nectarine-Rose and Blueberry-Lemon Compote.
